I am a huge fan of chicken salad. I have quite a few variations of chicken salad that I make because chicken is so diverse as is salads. I can eat a chicken salad for lunch, dinner, or even as a snack. So today I figured I would share one of those variations with you guys.

Delicious Baked Chicken Salad Recipe
Items needed to bake the chicken:
-2 frozen chicken thighs
– 2 tblespn garlic powder
– 2 tblespn onion powder
– 2 tblespn Slap Ya Mama Original seasoning
(I love adding the Slap Ya Mama seasoning to the chicken to give it an extra kick of spice, but you can leave it out and simply add 1 extra tablespoon of garlic powder and onion powder if you like.)
Items that are added to the salad:
– 1 bag of lettuce
– half of a cucumber
– 5 baby tomatoes
– 1 cup of Colby jack shredded cheese
Preheat oven 350 degrees. Shake 1 tablespoon of Slap ya Mama original seasoning, 1 tablespoon garlic powder, and 1 tablespoon of onion powder into a baking pan. Place the chicken thighs in pan on top of the seasonings. Shake the 2nd tablespoons of the Slap Ya Mama seasoning, garlic powder, and onion powder on top of the chicken thighs. Cover the pan with aluminum foil. Place the chicken in the oven for 85 minutes to bake. While chicken is cooking, cut up the cucumber and tomatoes. Put the lettuce in the bag, cucumbers, and tomatoes in a bowl to chill in the fridge. When the chicken is done baking, take it out and let it cool for 3 minutes. Slice up the chicken and put it on top of the salad. Make a plate and add the shredded cheese on top. Add whatever salad dressing you like. This is enough for 2 people.
